Not Meat and Potatoes: Eggs and Rice

I got the idea from The Feed Zone Cookbook, by Biju Thomas and Allen Lim.

The book, by the way, I am somewhat unimpressed with, but it's getting better. The main problem is that I think the authors tried to make the most basic recipe so you can add things as you want. However, this makes the recipes as written pretty bland and shitty. Maybe they said something in the directions at the beginning about the recipes being just starters, but who reads the f*@%ing directions.

However, now that I realize that everything in there needs additions, I've had some really good meals.

2nd Breakfast today is my take on the authors Eggs and Rice recipe.

The original recipe calls for three ingredients: White rice, eggs, and salt. Like I said, pretty goddamn lame. This isn't something I'd ever thought of, however, so I thought I'd give it an update.

Leftover brown rice
Eggs
Leftover filling from the Killer Quasadillas

Mixed the rice and quasadilla filling, nuked em, put two fried eggs on top.

Topped with a bit of ketchup, some Newman's Own Medium Pineapple salsa, and half an avocado sliced up.
